M\u00e1s tarde, figuras como Jos\u00e9 Luis Le\u00f3n, Alberto Gonz\u00e1lez y Gina Barbachano reflexionaron sobre la importancia de la barra como un espacio de encuentro, di\u00e1logo y experimentaci\u00f3n.<\/p>\n<p>Por su parte, la Cocina de Humo ofreci\u00f3 un recorrido por t\u00e9cnicas y procesos transmitidos de generaci\u00f3n en generaci\u00f3n. Cocineros como Erik Guerrero, Shary Romo, Lucho Mart\u00ednez, Blanca Villag\u00f3mez y \u00c1lex Ch\u00e1vez pusieron en pr\u00e1ctica el tema central de esta edici\u00f3n: los legados que definen y transforman la cocina mexicana.<\/p>\n<p>El d\u00eda cerr\u00f3 con la presencia fundamental de las cocineras tradicionales, guardianas de los saberes gastron\u00f3micos de Michoac\u00e1n.
